For 2 people

100 g quinoa
250 ml water
1/4 melon
1 nectarine
1 small red onion
5 basil leaves

And for the seasoning :

1 pinch of salt
1 pinch of pepper
1.5 tablespoons lemon juice
3 tablespoons of olive oil

Rinse the quinoa with plenty of water in a fine mesh strainer. Pour into a saucepan, add the water and quinoa. Bring the water to a boil, then cover and lower the heat. Simmer gently for 15 minutes. Drain and set aside to cool. This step can be done in advance.

Prepare the seasoning: In a bowl, place 1 pinch of salt, 1 pinch of pepper, 2 tablespoons of lemon juice, and lightly emulsify 4 tablespoons of olive oil.

Using a melon baller, remove about ten melon balls. Wash the nectarine and cut it into strips. Wash the basil, dry it and chop it. Peel the onion and cut it into small cubes.

Pour the salad dressing into the quinoa, add the diced onion and mix. Decorate with the nectarine slices, the melon balls and sprinkle with a few chopped basil leaves.
